A cute lil review of what our guests are eating for dinner, a recipe I am into, and some things that I am fixating on RN

You know, I imagine if you tell people that you’ve married an Italian, there is some sort of assumption that the Italian in question does most of the cooking. At least it is my dumb assumption. Why? Who knows really, other than we all wish we had an Italian home chef. Lillian Tung proved in her episode, however, that just because a spouse comes from the land of pasta, it doesn’t mean they’re in the driver’s seat in the kitchen at home. I am waiting to be invited to Westchester for those braised ribs.
I loved this episode for so many reasons, but far and away my favorite takeaway was Lillian’s relationship with her brother, Kevin, and how her mom carefully fostered that dynamic their whole childhood. What resulted is two siblings who have chosen to live close to each other, to raise their kids together, and yes, to go to Backstreet Boys together at the Sphere. May we all be so lucky to have a Kevin….or to be a Kevin for someone else.

I have found that grief and loss has my brain scrambled. I am having a hard time focusing on all of the tasks that life is putting to me - work, kids, life admin. I just can’t seem to focus. So I did what any rational person would do and bought a MASSIVE WALL CALENDAR so I can visualize a bit better what I need to be up to. It’s actually great and helping me to reclaim my own brain. It’s like SAMANTHA DUENAS recently wrote…maybe it’s time for my so called analog life to come back full force.

On the theme of helping members of my household to focus, this chart has made an entrance into our morning and nightly routine. It’s a very cute and engaging way of supporting my kids to remember what they need to do to start and end their days - oftentimes when they are at their most wild and unfocused. Some nights it works better than others but has been a good visual cue for getting us back on track when the monkeys want to be jumping on the bed.

Lastly, AIR FRYER SALMON. It’s a non-recipe, recipe, that needs to be in your repertoire if not already. It’s a multi purpose protein that works great for Salmon Bowls (salmon + any grain + some pickles and veggies) or make your own sushi night (seaweed, rice, salmon, cucumbers and kewpie sriracha, soy sauce, etc). In a large bowl, mix sesame oil (if no sesame allergy, leave out otherwise), soy sauce, honey, and rice wine vinegar. Toss the salmon in the mixture. Bonus points if you can marinate your salmon ahead of time. Put in the air fryer at 400 for 12 minutes or until internal temp reads 145 degrees F. Use it a million different ways. DELISH.
